Butterscotch Potato Chip Cookies

This recipe yields a crunchy and sweet drop cookie through use of butterscotch chips and crushed potato chips.

Ingredients

• 2 eggs
• 1 teaspoon baking soda
• 1 cup butter
• 1 cup white sugar
• 1 cup packed brown sugar
• 2 ½ cups all-purpose flour
• 1 ⅓ cups butterscotch chips
• 2 cups crushed potato chips

Recipe Instructions

Step 1

Preheat oven to 350 degrees F (180 degrees C).

Step 2

Cream together sugars and butter or margarine. Beat in eggs, add flour and baking soda, mix well.

Step 3

Fold in butterscotch chips and potato chips.

Step 4

Drop by tsp. on cookie sheet and bake for 8 to 10 minutes.
