Meanwhile, preheat an outdoor grill for medium heat and lightly oil the grate.

Make chicken: Combine cilantro, club soda, olive oil, honey, lime zest, lime juice, salt, and pepper in a blender. Process until marinade is smooth, about 30 seconds.

Place each chicken breast between plastic wrap and gently pound using a meat mallet to about 1/2-inch thickness. Place in a large bowl and pour marinade over chicken. Let sit at room temperature, about 20 minutes.

Make salsa: Toss together tomatoes, strawberries, green onions, jalapeño pepper, cilantro, lime juice, salt, and pepper in a medium serving bowl until well combined. Cover and refrigerate until ready to serve.

Remove chicken from marinade and cook on the preheated grill until no longer pink inside and the juices run clear, 3 to 5 minutes per side. An instant-read thermometer inserted in the center should read at least 165 degrees F (74 degrees C). Discard excess marinade.
