Recipe Instructions

Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
Heat a large skillet over medium-high heat. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer beef to a 9x13-inch baking dish.
Step 3
Heat oil in the same skillet over medium heat. Add onion and garlic; cook and stir until onion is translucent, about 10 minutes. Spoon onion mixture over ground beef.
Step 4
Stir 1 cup Cheddar cheese, tomatoes with green chile peppers, salsa, sour cream, corn, salt, and black pepper into ground beef mixture until well combined; top with remaining 2 cups Cheddar cheese.
Step 5
Bake in the preheated oven until cooked through and cheese is melted, about 45 minutes. Let stand before serving, 10 minutes.
