Eighth Race Pie

Don't know where the name of this pie came from, but it is one of the best pecan, chocolate pies I've ever tasted. Serve warm or cold with lightly sweetened whipped cream or vanilla ice cream. If preferred, use walnuts instead of pecans.

Recipe Instructions

Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
Cream sugar and butter or margarine together until light and fluffy. Beat eggs, and add with corn syrup, salt, and vanilla to the creamed mixture; beat well. Stir in chocolate chips, nuts, and bourbon. Pour filling into crust.
Step 3
Place pie on lowest rack in oven. Bake for 45 minutes.

  • 1 teaspoon vanilla extract
  • 1 cup white sugar
  • ¼ teaspoon salt
  • ¼ cup butter
  • ½ cup chopped pecans
  • 3 eggs
  • ½ cup semisweet chocolate chips
  • 1 recipe pastry for a 9 inch single crust pie
  • ¾ cup light corn syrup
  • 2 tablespoons bourbon
