This green tomato soup with pieces of crispy bacon is a great way to use green tomatoes at the end of the season. The soup freezes really well! I recommend serving it with nice crusty bread.

Recipe Instructions

Step 1
Place bacon in a stockpot over medium-low heat; cook and stir until bacon begins to brown, about 5 minutes.
Step 2
Add onion and garlic; cook and stir until onion is tender and bacon is crispy, about 5 to 7 minutes.
Step 3
Add green tomatoes, vegetable broth, celery salt, bay leaf, and black pepper; bring to a boil. Reduce heat and simmer until tomatoes are tender, about 40 minutes.

  • 8 slices bacon, cut into bite-size pieces
  • 1 small red onion, chopped, or more to taste
