Instead of having the same old boring eggs and bacon, shake it up a bit with this traditional Mexican-style breakfast favorite of migas con huevo.

Recipe Instructions

Step 1
Beat eggs in a bowl until frothy. Add tortilla strips and let soak a few minutes.
Step 2
Add tomato, onion, jalapeno peppers, and a bit of Cheddar cheese to the egg mixture.
Step 3
Spray a skillet with nonstick spray and heat over medium-high heat. Add garlic; cook and stir to brown lightly, about 1 minute. Pour in egg mixture; cook and stir until eggs are set, about 5 minutes. Season with salt and pepper.
Step 4
Reduce heat to low and sprinkle remaining Cheddar over top. Cover and cook until cheese is melted, 2 to 3 more minutes.

  • 1 cup shredded Cheddar cheese, divided
  • 1 large tomato, diced
  • 1 tablespoon garlic, minced
  • 5 large eggs
  • 6 (6 inch) corn tortillas, cut into bite-sized strips
  • 3 medium fresh jalapeno peppers, chopped
  • nonstick cooking spray (such as Pam®)
