Although this unusual recipe calls for navy beans, your guests will not be able to tell. Cooked beans are pureed and dolled up with evaporated milk, lots of sugar, and a heap of spices -cinnamon, ginger, nutmeg and cloves. This sweet and spicy filling is then poured into a pie shell and baked. Serve with whipped cream and a sprinkling of candied ginger.

Preheat oven to 425 degrees F (220 degrees C).

In a large bowl, combine eggs, evaporated milk, and mashed navy beans. Mix well. Add sugar, salt, cinnamon, ginger, nutmeg, and cloves. Mix until all ingredients are thoroughly combined. Pour mixture into pastry shell.
Step 3
Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 35 minutes.
