Recipe Instructions

Step 1
Heat a small nonstick skillet over medium heat; cook and stir prosciutto in the hot skillet until crisp, about 2 minutes.
Step 2
Toss together yellow squash and zucchini with salt in a large bowl until well combined.
Step 3
Whisk together mint, olive oil, lemon juice, lemon zest, and black pepper in a small bowl until well combined; pour over squash mixture. Toss to coat.
Step 4
Divide squash salad onto 4 plates. Sprinkle prosciutto and feta cheese evenly over salads.
