Fresh spinach braised with onion, olive oil, chickpeas and chopped dill gets a splash of lemon juice to bring out the bright flavors of this side dish. Serve with rice for a vegetarian main dish.

Recipe Instructions

Step 1
In a large skillet, heat olive oil over medium heat. Add onion, and saute until soft. Add chickpeas, and toss to coat in oil.
Step 2
Clean spinach well and cut away thick stems; add undrained spinach and dill to skillet, and cook until spinach is tender.
Step 3
Stir in lemon juice, and season with salt and pepper to taste. Serve warm.

  • 1 large onion, thinly sliced
  • 1 pound spinach
  • 1.5 cups canned chickpeas, drained
  • 0.5 cup minced fresh dill weed
