Recipe Instructions

Step 1
Peel cucumbers into a striped pattern lengthwise using a vegetable peeler. Slice cucumbers in half lengthwise; cut each half into 1/4-inch slices creating half-moon shapes. Combine cucumbers, watermelon, and red onion in a large bowl.
Step 2
Whisk together rice vinegar, white wine vinegar, and lime juice in a small bowl until well combined; add mint. Muddle mint by vigorously stirring and pressing leaves with a spoon until bruised but not falling apart. Remove and discard mint leaves.
Step 3
Drizzle dressing over salad and gently toss. Sprinkle with feta cheese; toss again.
