Recipe Instructions

Step 1
Preheat the oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
Step 2
Cream together brown sugar, white sugar, and shortening in a large bowl. Add eggs, 1 at a time, and beat well after each addition. Stir in grated zucchini and vanilla.
Step 3
Mix flour, baking powder, cinnamon, baking soda, and salt together in a separate bowl. Add to wet ingredients; stir and scrape the sides of the bowl until all dry ingredients are absorbed. Mix in nuts and dates. Drop tablespoonfuls of dough 2 inches apart onto the prepared baking sheets.
Step 4
Bake in the preheated oven until edges are golden, 12 to 15 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely. Repeat to bake remaining batches.
