Combine ketchup, brown sugar, tomato paste, vinegar, corn syrup, pineapple juice, bourbon, water, onion, lemon juice, mustard powder, hot sauce, Worcestershire sauce, salt, black pepper, onion powder, garlic powder, allspice, Chinese five-spice powder, and celery salt in a saucepan over medium heat; bring to a boil. Reduce heat to low; simmer until flavors have blended and sauce is slightly reduced, about 1 hour.

  • 2 tablespoons minced white onion
  • 1 fluid ounce bourbon whiskey
  • 0.25 cup dark corn syrup
  • 0.75 cup brown sugar
  • 0.125 teaspoon ground allspice
  • 0.5 cup apple cider vinegar
  • 1.5 teaspoons mustard powder
